In the earlier blog we learnt about the American malts. This time we will throw some light on the German grain malts that are provided by Mahalaxmi Malt Extract. 


GERMAN GRAIN MALTS


German Pale Malt


This German pale malt produces a smooth, grainy flavor which is usually used in German lagers and Alt beers.


Wheat Malt


This German wheat malt is used upto around 80% in various wheat beers such as weiss, weizen and Berliner weisse. The proportion in which the blending is done is 20 to 70% with pale malts - weizen malt is the perfect companion for German wheat yeast strains for a full flavored, classic wheat beer.


Vienna Malt


When you are looking for malt that is high in diastatic power which you can use as 100% of the total grist for a fuller, deeper malt flavor and aroma or with up to 40% adjuncts - then you should go for German Vienna. It is commonly used to add light amber color and some body to your beer.


Munich Malt 6°L


Munich Malt adds a light golden color and a lightly caramelized flavor which is quite hard to find when using Vienna malt as munich malt has minimal diastatic power for added adjuncts.


Crystal  9-30°L


Also called as Med. Caramel, Cara Hell, Cara Red, and Cara Amber . It is used in the proportion of 3 to 20% of German Caramel malt to add color, sweetness and body to European lagers, Viennas and Marzen / Oktoberfest lagers.


Carafa Special 413-450°L


It is a dehusked barley which is used to help reduce the harshness which is sometimes present in other highly roasted grains. This special feature allows it to retain the color, aroma, and body in authentic German dark lagers such as dunkels and schwarzbier. Not only this, it can also be used as a substitute to chocolate malt in stouts and porters, where a more mellow roasted grain flavor is desired.


German Melanoidin Malt 23° L


This melanoidin malt is somehow similar to German Munich malt, except it is more aromatic and darker in color. Along with this, it also produces a more reddish color than the gold color produced by Munich malt. German Melanoidin Malt is known to be helpful in improving body and many brewers use it to duplicate the fullness developed in decoction mashing.
